Prepare the Vegetables

Wash and chop all the vegetables into bite-sized pieces. Slice the bell peppers, carrot, and onion, and prepare the broccoli florets, snow peas, and mushrooms.

Make the Sauce

In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Whisk together until the cornstarch is fully dissolved.

Heat the Pan

In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat until shimmering.

Stir-Fry the Vegetables

Add the sliced onion to the skillet and sauté for 2 minutes until translucent. Then, add the bell peppers, broccoli, carrot, snow peas, and mushrooms. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

Add the Sauce

Pour the prepared sauce over the stir-fried vegetables. Stir well to coat all the vegetables and cook for an additional 2-3 minutes until the sauce thickens slightly.

Serve

Remove the skillet from heat. Serve the vegetable stir fry hot over cooked rice or noodles, if desired.
