Cucumber-Jalapeño Fresca

Prepare the Ingredients

Slice the cucumber and jalapeño pepper. Remove the seeds from the jalapeño if you prefer a milder flavor.

Blend the Mixture

In a blender, combine the sliced cucumber, jalapeño, fresh lime juice, cane sugar, and cold water. Blend until smooth.

Strain the Mixture

Use a fine mesh strainer or cheesecloth to strain the mixture into a pitcher, discarding the solids.

Chill and Serve

Chill in the refrigerator for at least 30 minutes before serving over ice.

Horchata Fresca

Soak the Rice

Rinse the long-grain white rice under cold water. Soak the rice with the cinnamon stick in 2 cups of cold water for at least 4 hours or overnight.

Blend the Mixture

Remove the cinnamon stick and blend the soaked rice with the cinnamon and 2 additional cups of cold water until smooth.

Strain the Mixture

Strain the blended mixture through a fine mesh strainer or cheesecloth into a pitcher.

Add Flavorings

Stir in the vanilla extract and cane sugar until dissolved. Add milk and mix well.

Chill and Serve

Chill in the refrigerator before serving over ice.

Strawberry-Mint Fresca

Wash and hull the fresh strawberries, and wash the mint leaves.

In a blender, combine the strawberries, mint leaves, fresh lime juice, cane sugar, and cold water. Blend until smooth.
