Prepare the Mango Puree
If using fresh mangoes, peel and chop them, then blend in a blender until smooth. If using canned mango, simply blend the contents until smooth.
Mix the Bellini
In a large pitcher, combine the mango puree with the Prosecco. Stir gently to combine, being careful not to lose the fizz.
Serve
Pour the mixture into champagne flutes and serve immediately. Optionally, garnish with a slice of fresh mango on the rim.
