Sweet Potato Roll Directions

Prepare the Sweet Potatoes

Peel and chop the sweet potatoes into small cubes. Place them in a pot of boiling water and cook for about 15 minutes or until tender. Drain and let cool slightly.

Mash the Sweet Potatoes

In a large mixing bowl, mash the cooked sweet potatoes until smooth. Allow to cool to room temperature.

Combine Dry Ingredients

In another bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.

Mix Wet Ingredients

In a separate bowl, beat the egg and then add the melted butter and milk. Mix until smooth.

Combine Mixtures

Gradually add the dry ingredient mixture to the sweet potato mixture, followed by the wet ingredients. Stir until just combined, being careful not to overmix.

Preheat and Prepare Baking Pan

Preheat your oven to 350°F (175°C). Grease or line a baking dish with parchment paper.

Bake the Rolls

Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool and Serve

Once baked, remove from the oven and let the sweet potato rolls cool in the pan for 10 minutes before transferring to a wire rack. Serve warm with Déjà vu Aioli.
