Winemaking Process

Harvesting

Harvest the Montepulciano grapes at optimal ripeness, usually in late September to early October.

Crushing

Crush the harvested grapes to release the juice and pulp, placing them in a fermentation tank.

Fermentation

Add yeast to the tank and allow fermentation to occur at a controlled temperature (18-25°C) for approximately 7-10 days.

Pressing

After fermentation, press the mixture to separate the liquid wine from the solid grape skins.

Aging

Transfer the wine to oak barrels for aging. Allow it to age for at least 12 months to develop complex flavors.

Sulfur Addition

Add sulfur dioxide to stabilize the wine before bottling.

Bottling

Bottle the wine in clean, sterilized bottles and seal them with corks.
