Method

Shrimp Marinade

Prepare Marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, chili powder, salt, and black pepper. Mix well.

Marinate Shrimp

Add the peeled and deveined shrimp to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes.

Rice

Cook Rice

In a saucepan, combine the long-grain white rice, water, and salt. Bring to a boil over medium heat.

Simmer Rice

Once boiling, reduce heat to low, cover, and let simmer for about 15-20 minutes or until the rice is tender and the water is absorbed.

Fluff Rice

Remove from heat and let sit for 5 minutes. Fluff the rice with a fork before serving.

Beans

Prepare Beans

In a small saucepan, heat the canned black beans over medium heat. Stir in garlic powder, cumin, salt, and black pepper to taste.

Simmer Beans

Cook for about 5-7 minutes, stirring occasionally until heated through and flavors are blended.

Shrimp Cooking

Grill Shrimp

Preheat your grill or grill pan over medium-high heat. Skewer the marinated shrimp, if desired, for easier grilling.

Cook Shrimp

Grill the shrimp for 2-3 minutes on each side, or until they turn pink and are cooked through.

Tortillas

Warm Tortillas

While the shrimp are grilling, warm the corn tortillas on the grill or in a separate skillet for about 30 seconds on each side.
