Assembling the Enchiladas
Prepare the Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable, about 15-30 seconds.
Fill the Tortillas
Place about 1/4 cup of the filling mixture in the center of each tortilla. Roll them up tightly and place seam-side down in a baking dish.
Baking
Top with Sauce
Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle additional cheese on top if desired.
Bake
Cover the dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes. Remove foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
Serving
Garnish and Serve
Remove from the oven, let cool for a few minutes. Top with sour cream and chopped cilantro before serving.
