Custard Preparation

Mix the Custard Ingredients

In a large mixing bowl, whisk together 4 large eggs until well beaten. Then, add the sweetened condensed milk, evaporated milk, vanilla extract, and 1 tablespoon of granulated sugar. Mix until all ingredients are combined and the mixture is smooth. Set aside.

Make the Caramel

In a medium saucepan, combine 1 cup of granulated sugar and 1 tablespoon of water. Cook over medium heat, stirring gently until the sugar dissolves. Once dissolved, stop stirring and allow the mixture to boil until it turns a golden brown color, about 5-7 minutes. Be careful not to let it burn.

Coat the Flan Molds

Immediately pour the hot caramel into a round flan mold or individual ramekins, swirling to coat the bottom evenly. Allow the caramel to harden while you prepare the custard.

Baking the Flan

Combine and Bake

Preheat your oven to 350°F (175°C). Pour the custard mixture over the cooled caramel in the mold. Place the flan mold into a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the mold. Bake for approximately 50-60 minutes or until the custard is set and a knife inserted in the center comes out clean.

Cool and Serve

Once baked, remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan and invert it onto a serving plate. The caramel will flow over the top.
