Prepare the Potatoes

Preheat the oven to 425°F (220°C). Toss the fingerling potatoes with olive oil, rosemary, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.

Make the Bourbon Shallot Butter

In a small saucepan, melt the butter over medium heat. Add minced shallots and sauté until translucent. Stir in bourbon and season with a pinch of salt. Remove from heat and add chopped parsley.

Cooking the Ribeye and Greens

Sear the Ribeye

Season the ribeye steaks with olive oil, salt, pepper, rosemary, thyme, and minced garlic. Heat a cast-iron skillet over high heat until smoking. Sear the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before serving.

Sauté the Greens

In the same skillet, add more olive oil if necessary and sauté the garlic for 30 seconds. Add the mixed greens, season with salt and pepper, and sauté until just wilted, about 2-3 minutes.
