Crust Preparation

Prepare the crust

Preheat the oven to 350°F (175°C). Crush the coconut-almond cookies in a food processor until fine crumbs form. In a bowl, mix the cookie crumbs with melted unsalted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Make the cheesecake filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until incorporated. Add the vanilla extract and mix in the eggs one at a time, ensuring each is fully blended before adding the next. Finally, stir in the amaretto liqueur. Pour the filling over the cooled crust.

Bake the cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour, then remove and refrigerate for at least 4 hours or overnight.

Bruléed Bananas

Prepare bruléed bananas

Slice the bananas in half lengthwise. Place them cut-side up on a baking sheet. Sprinkle with granulated sugar. Using a kitchen torch, bruléed the sugar until caramelized and golden brown. Set aside.

Spiced Almond Brittle

Make the almond brittle

In a saucepan, combine the sliced almonds, granulated sugar, water, and ground cinnamon. Cook over medium heat, stirring constantly until the mixture turns a deep amber color. Pour onto a parchment-lined baking sheet and let cool completely. Once hardened, break into pieces.

Assemble the cheesecake

Once the cheesecake is fully chilled, slice and serve with bruléed bananas on top and sprinkle with spiced almond brittle. Drizzle a shot of amaretto over the cheesecake before serving.
