Prep and batter

Rinse shrimp and pat dry. Create a dry coating by whisking together flour, cornstarch, baking powder, salt, paprika, garlic powder, onion powder, and black pepper in a medium bowl. In a separate bowl, whisk the egg with cold beer or cold water until frothy. Dip each shrimp first into the dry batter, then dip into the wet mixture, letting excess drip off, and return to the dry coating to fully coat.

Heat oil

Pour vegetable oil into a large heavy pot or Dutch oven to a depth of about 3 inches. Heat to 350°F (175°C). Use a thermometer to monitor temperature for safety and accuracy.

Fry shrimp

Shake off excess coating and carefully place coated shrimp into hot oil in small batches to avoid crowding. Fry for 2–3 minutes, turning once, until golden brown and crisp. Remove with a slotted spoon and drain on a rack or paper towels.

Serve

Transfer fried shrimp to a warm serving platter. Serve with lemon wedges and cocktail sauce on the side for dipping.
