Prepare the Batter
In a large mixing bowl, combine the crawfish tails, corn kernels, flour, cornmeal, chopped green onions, beaten eggs, milk, baking powder, Cajun seasoning, salt, and black pepper. Mix until just combined.
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fritters
Using a spoon or a small ice cream scoop, drop spoonfuls of the fritter batter into the hot oil. Fry in batches, making sure not to overcrowd the pan, for about 3-4 minutes on each side or until golden brown.
Drain and Serve
Once fried, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve warm.

Mix the Ingredients
In a medium bowl, combine the mayonnaise, Dijon mustard, horseradish, Cajun seasoning, lemon juice, minced garlic, finely chopped green onions, and salt.
Chill
Mix well until smooth, then refrigerate for at least 30 minutes before serving to let the flavors meld.
