Method
Calamari Preparation
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Marinate in Buttermilk
Place the dried calamari rings in a bowl and cover them with buttermilk. Let them marinate for at least 30 minutes in the refrigerator.
Mix Dry Ingredients
In a separate bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).
Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are evenly coated.
Fry the Calamari
Carefully place the coated calamari rings in the hot oil in small batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Cocktail Sauce Preparation
Mix the Ingredients
In a small bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir until well blended.
Adjust Seasoning
Taste the cocktail sauce and adjust with additional hot sauce if desired.
