Method
In a large pot, heat the vegetable oil over medium heat. Add a few popcorn kernels to the pot and cover it. Wait until the kernels pop, then add the rest of the popcorn kernels and cover again.
Shake the pot occasionally to ensure even popping. Once the popping slows down to about 2 seconds between pops, remove the pot from heat. Pour the popcorn into a large bowl and sprinkle with salt.
In a separate bowl, combine the mayonnaise, sherry vinegar, paprika, cayenne pepper, and lemon juice. Mix well until smooth and set aside.
Add the cooked crawfish tails to the bowl of popcorn and gently toss to combine, ensuring the crawfish are evenly distributed.
Serve the popcorn crawfish in a large bowl alongside the sherry mayo and cocktail sauce for dipping.
