Chicken Shawarma

Marinate the Chicken

In a bowl, combine the yogurt, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, olive oil, salt, and black pepper. Add the boneless chicken thighs and coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Cook the Chicken

Preheat the grill or oven to medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side or until fully cooked and slightly charred. Let it rest for a few minutes before slicing.

Shish Kebab

Prepare the Kebab Skewers

In a bowl, mix the lamb or beef cubes, chopped bell peppers, chopped onion, olive oil, ground cumin, salt, and black pepper. Thread the mixture onto skewers, alternating between meat and vegetables.

Grill the Kebabs

Preheat the grill to high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the meat is cooked through and has nice grill marks.

Beef Kabob

Marinate the Beef

In a bowl, combine the cubed beef sirloin, minced garlic, olive oil, ground black pepper, ground cumin, and salt. Mix well to coat the beef. Let it marinate for at least 30 minutes.

Cook the Beef

Preheat the grill or oven to medium-high heat. Skewer the beef cubes and grill for about 8-10 minutes, turning occasionally until cooked to your desired doneness.

Rice

Cook the Rice

In a medium saucepan, combine the basmati rice, water, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork before serving.

Salad

Prepare the Salad

In a bowl, combine the diced cucumber, diced tomatoes, and thinly sliced red onion. Drizzle with lemon juice and olive oil. Season with salt and black pepper. Toss gently to combine.
