Preparation
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
Steam the Rice
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice for about 30 minutes, or until fully cooked and sticky.
Cool the Rice
Spread the steamed rice out on a clean surface and let it cool to room temperature.
Mix Ingredients
In a large mixing bowl, combine the cooled rice, yeast, and sugar. Mix thoroughly to ensure that the yeast is evenly distributed.
Fermentation
Transfer the mixture to a fermentation container. Pour in the water and stir well. Cover the container with a clean cloth and let it ferment at room temperature for about 5-7 days.
Strain the Liquid
After fermentation, strain the mixture through a fine mesh sieve or cheesecloth into a clean bottle to separate the liquid from the solids.
Add Rice Wine
Mix in the Korean rice wine (or similar) to enhance the flavor and aroma.
Bottle and Age
Transfer the strained liquid into clean bottles. Seal tightly and let it age in the refrigerator for at least 2 weeks before serving.
