Preparation
Prepare the Rice
Rinse the cooked rice thoroughly to remove excess starch. Let it cool completely.
Mix Ingredients
In a large bowl, combine the cooled rice, water, and nonglutinous rice flour. Mix well until smooth.
Add Yeast
Sprinkle the yeast over the mixture and stir gently to combine. Let it sit for 10-15 minutes.
Fermentation
Cover the mixture with a cloth and let it ferment in a warm place for about 3-5 days, stirring daily. The mixture should bubble and develop a sour aroma.
Strain the Mixture
Once fermentation is complete, strain the liquid through a fine mesh sieve or cheesecloth into a clean container. Discard the solids.
Sweeten the Liquor
Add sugar to the strained liquid, stirring until fully dissolved. If desired, add dried fruits for flavoring.
Bottle and Age
Transfer the liquor into bottles and seal. Allow it to age in the refrigerator for at least a week before serving.
