Chill glass

Place a Champagne flute or coupe in the freezer for a few minutes, or fill it with ice water while you prepare the cocktail to chill it.

Combine base ingredients

Add gin, fresh lemon juice, and simple syrup to a cocktail shaker filled with ice. Use the specified quantities: 1.5 oz gin, 0.5 oz lemon juice, 0.5 oz simple syrup.

Shake

Shake vigorously for about 10–12 seconds until the shaker feels cold. This chills and slightly dilutes the mixture.

Strain

Discard the ice or water from the chilled flute or coupe. Double-strain the shaken mixture into the chilled glass using a Hawthorne strainer and a fine mesh strainer if available to remove ice shards and citrus pulp.

Top with sparkling wine

Carefully top the strained gin-lemon mixture with about 3 oz of chilled Champagne or other dry sparkling wine. Pour gently to preserve bubbles and avoid overflowing.

Garnish and serve

Express a lemon twist over the drink (pinch the peel to release oils), run it around the rim if desired, then drop the twist into the glass. Serve immediately while sparkling.
