Season the Sablefish

Pat the sablefish fillets dry with paper towels. Season both sides of the fillets with salt and black pepper.

Preheat your oven to 375°F (190°C).

Combine Ingredients

In a small saucepan, combine the sake, mirin, soy sauce, brown sugar, grated ginger, and minced garlic.

Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves. Allow it to simmer for about 5 minutes until slightly thickened.

Place the seasoned sablefish fillets on a baking sheet lined with parchment paper. Brush generously with the sake glaze.
