1

Prepare the Apricots

Begin by chopping the dried apricots into small pieces to allow for better infusion of flavor.

2

Create the Apricot Mixture

In a large bowl, combine the chopped dried apricots, sugar, and citric acid. Mix well to ensure that the sugar and citric acid are evenly distributed among the apricots.

3

Add Water and Yeast

Pour the water into the apricot mixture. Sprinkle the yeast over the top, allowing it to activate for about 10 minutes.

4

Ferment the Mixture

Cover the bowl with a clean cloth and let the mixture sit at room temperature for 48 hours, stirring occasionally to help dissolve the sugar and extract flavors from the apricots.

5

Strain the Mixture

After fermentation, use a fine mesh strainer or cheesecloth to strain the mixture, pressing down on the apricots to extract as much liquid as possible.

6

Add Brandy

Transfer the strained liquid back into a clean jar or bottle and add the brandy. Mix well to combine the flavors.

7

Bottle and Age

Seal the bottle tightly and store it in a cool, dark place. Let the apricot brandy age for at least 2 months to develop its full flavor.

8

Serve

After aging, the apricot brandy is ready to be served. Enjoy it chilled or as part of a cocktail.
