Prepare the Pecans

In a skillet over medium heat, melt 1/4 cup of the butter. Add the pecans and toast them until golden brown, stirring frequently, about 5-7 minutes. Set aside to cool.

Make the Base

In a saucepan, melt the remaining butter over medium heat. Add the sugar and salt, stirring until dissolved. Gradually whisk in the heavy cream and whole milk. Bring to a simmer.

Combine Egg Yolks

In a bowl, whisk the egg yolks. Slowly pour in about 1/2 cup of the warm cream mixture to temper the yolks. Then, whisk the tempered yolks back into the saucepan with the remaining cream.

Thicken the Mixture

Continue to cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 10 minutes.

Cool and Add Flavor

Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until chilled, about 2 hours.

Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. In the last few minutes of churning, add the toasted pecans.

Freeze

Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.

Scoop the butter pecan ice cream into bowls and enjoy!
