Prepare the Tomato Mixture

Chop the tomatoes, garlic, and basil. Combine them in a bowl with olive oil, balsamic vinegar, salt, and pepper.

Slice the loaf of bread and toast it until golden brown.

Top the toasted bread slices with the tomato mixture and serve immediately.

Marinate the Chicken

In a bowl, mix olive oil, minced garlic, lemon juice, thyme, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.

Cook the Chicken

Heat a skillet over medium heat and cook the marinated chicken breasts for about 7-8 minutes on each side or until fully cooked.

In a saucepan, bring vegetable broth to a boil. Add rice, reduce heat, cover, and simmer for 15 minutes or until rice is tender.
