Coffee base
Brew espresso or strong coffee
Brew 1 full cup (about 1 cup) of very strong coffee or 1–2 shots of espresso (≈30–60 ml) and keep it hot. If you used concentrated espresso shots, pour them into the serving cup and top with hot water to reach approximately 1 cup of liquid total. This is the bold coffee base for the leche manchada.
Milk & foam
Heat milk
Pour 1 cup whole milk into a small saucepan and warm over medium-low heat until it reaches about 150°F (65°C) — steam will rise and small bubbles will form at the edges, but do not boil. Stir occasionally to prevent a skin from forming.
Froth milk
Froth the warmed milk to produce a dense, creamy microfoam. Use a milk frother wand, handheld frother, French press, or vigorously whisk by hand. If using extra milk for more foam, steam or froth 1/4 cup separately and reserve the foam.
Tap and settle
Tap the milk container gently on the counter and swirl to break large bubbles and integrate foam for a silky texture suitable for pouring.
Assembly & service
Preheat cup
Preheat your serving cup by rinsing with hot water, then discard the water. This keeps the leche manchada warm longer.
Combine coffee and milk
Pour the hot coffee or espresso into the preheated cup until it is about two-thirds full (roughly 2/3 cup). Slowly add the warmed milk, holding back foam with a spoon. The traditional leche manchada has a higher milk-to-coffee ratio than straight espresso—aim for about 1:1 to 2:1 milk to coffee depending on taste.
Garnish
Sprinkle a pinch of ground cinnamon or cocoa powder over the foam if desired, or place a cinnamon stick at the side for stirring and aroma.
Serve
Serve immediately while hot. Encourage stirring before drinking if added sugar or flavoring was used.
