Method

Horchata Preparation

1

Soak the Rice

In a bowl, combine the long-grain white rice and 2 cups of water. Allow it to soak for a minimum of 4 hours or overnight for best results.

2

Blend the Mixture

After soaking, drain the rice and place it in a blender with the cinnamon stick, vanilla extract, sugar, and 4 cups of water. Blend until smooth.

3

Strain the Mixture

Pour the blended mixture through a fine mesh strainer or cheesecloth to separate the liquid from the solids. Discard the solids.

4

Serve

Chill the horchata in the refrigerator and serve over ice with additional cinnamon on top if desired.

Soak the Cashews

8

Serve
