Method
Base Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C) to ensure it’s hot enough for baking.
Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 1 tsp of salt. Whisk together until well combined.
Combine Wet and Dry
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.
Pour into Baking Dish
Grease a baking dish with non-stick spray or butter. Pour the batter into the dish, spreading it evenly.
Bake
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Topping Preparation
Prepare Strawberries
While the base is baking, prepare the strawberries. Rinse and slice 1 cup of fresh strawberries.
Sweeten Strawberries
In a small bowl, sprinkle 2 tbs of powdered sugar over the sliced strawberries and toss gently to coat. Let them sit for about 10 minutes to macerate.
Whip Cream
If using heavy cream, whip it until it forms soft peaks. If using pre-made whipped cream, set aside.
Assembly
Cool the Base
Once the base is done baking, remove it from the oven and let it cool for about 10 minutes in the dish.
Serve
Cut the base into squares, top each piece with sweetened strawberries and a dollop of whipped cream. Enjoy your Mediana!
