Preparation
Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides. Heat a large skillet over medium heat and melt 2 tablespoons of butter.
Cook the Chicken
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Prepare the Vegetables
In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the broccoli florets and sauté for about 3-4 minutes until tender. Add the fresh tomatoes, artichoke hearts (drained and chopped), and black olives.
Making the Sauce
Combine Sauce Ingredients
Pour in the white wine and chicken stock into the skillet with vegetables. Bring to a simmer and let it cook for about 5 minutes, allowing the flavors to meld.
Return Chicken to Skillet
Return the cooked chicken breasts to the skillet, spooning some of the sauce and vegetables over the top. Cover and let it simmer for an additional 5 minutes to heat through.
Serving
Plate the Dish
