Preparation of Chimichurri Sauce

Make the Chimichurri

In a food processor, combine fresh parsley, garlic cloves, lemon juice, olive oil, and red chili flakes. Blend until smooth. Season with salt and pepper to taste.

Cooking the Steak

Marinate the Steak

Place the beef flank steak in a shallow dish and pour half of the chimichurri sauce over it. Make sure the meat is well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Grill the Steak

Preheat your grill to medium-high heat. Remove the steak from the marinade and let any excess sauce drip off. Season both sides with salt and black pepper. Grill for about 6-7 minutes per side for medium-rare, or until desired doneness.

Rest the Steak

Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes before slicing. This helps retain the juices.

Slice the steak against the grain into thin strips. Serve on a platter with grilled vegetables and the remaining chimichurri sauce drizzled over the top.
