In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Boil Water Mixture

Once boiling, remove the saucepan from heat and quickly stir in 1 cup of all-purpose flour until a dough forms. Return the saucepan to low heat for about 1-2 minutes, stirring continuously until the mixture pulls away from the sides of the pan and forms a ball.

Add Flour

Transfer the dough to a mixing bowl and let it cool for about 5 minutes. Add 2 large eggs, one at a time, mixing well after each addition until the dough is smooth and glossy.

Incorporate Eggs

In a deep frying pan or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).

Heat Oil

Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil, cutting them with scissors.

Fry the churros until they are golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.

In a shallow bowl, combine 1 cup of granulated sugar with 1 teaspoon of ground cinnamon.

Chop the red and green bell peppers, onion, and tomatoes. Mince the garlic cloves. Clean the mussels and peel the shrimp if not already done.

Prepare the Ingredients

Cut the chicken thighs into bite-sized pieces. Season with salt, black pepper, and smoked paprika. Set aside for at least 15 minutes.

Marinate Chicken

In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion, red bell pepper, and green bell pepper. Cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute.

Sauté the Vegetables

Add the marinated chicken to the pan and cook until browned on all sides, about 5-7 minutes.

Stir in the diced tomatoes and the bomba rice. Cook for 1-2 minutes to toast the rice slightly. Pour in the chicken broth and add the saffron strands. Bring to a simmer.

Once the broth is simmering, reduce heat to low and add the shrimp and mussels. Sprinkle the frozen peas over the top. Do not stir after this point.

Cover the pan with a lid or aluminum foil and let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid. If needed, add more broth during cooking.

Once cooked, remove from heat and let the paella rest for about 5 minutes. Fluff the rice gently with a fork, serve warm, and enjoy!

Gently toss the ingredients in the bowl until they are well combined. Set aside to allow the flavors to meld.

Mix the Topping

Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2-inch thick slices. Place the slices on a baking sheet.

Lightly brush or drizzle olive oil over the top of each slice of bread.

Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until golden and crispy. Keep an eye on it to prevent burning.

Remove the toasted bread from the oven and let it cool slightly. Spoon a generous amount of the tomato mixture onto each slice of toast.

Serve immediately while the bread is still warm and enjoy your delicious bruschetta!

Preheat your oven to 400°F (200°C). Slice the bread into 1/2 inch thick slices. Place them on a baking sheet and drizzle with olive oil.

Prepare the Bruschetta

In a bowl, combine diced fresh tomatoes, chopped basil leaves, minced garlic, balsamic vinegar, salt, and pepper. Mix well.

Bake the sliced bread in the preheated oven for about 5-7 minutes until lightly toasted.

Top each toasted slice with the tomato mixture. Drizzle a little more olive oil on top if desired.

Assemble

In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.

While the chicken marinates, wash and trim the asparagus. Drizzle with olive oil, salt, and pepper, and sauté in a pan over medium heat for about 5-7 minutes until tender.

Cook the Asparagus

Preheat a grill or skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side or until cooked through.

Plate the chicken alongside the sautéed asparagus.

In a saucepan, heat heavy cream until just simmering. Remove from heat and add chopped chocolate, stirring until smooth.

Make the Chocolate Ganache

Let the ganache cool at room temperature, then refrigerate for about 30 minutes until thick.
