Marinate the Ribs

In a large bowl, combine olive oil, minced garlic, chopped rosemary, thyme, salt, black pepper, and lemon juice. Mix well to create a marinade.

Coat the Ribs

Add the short ribs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, ideally overnight.

Grilling

Prepare the Grill

If using charcoal, light the charcoal and let it ash over until it is glowing. For gas grills, preheat on high for about 10 minutes. If using wood chips, soak them in water for 30 minutes before grilling.

Grill the Ribs

Remove the ribs from the marinade and let any excess drip off. Place the ribs on the grill over medium heat. Grill for about 5-7 minutes on each side, or until the meat is cooked to your desired doneness and has nice grill marks.

Rest and Serve

Once grilled, remove the ribs from the grill and let them rest for about 5 minutes. Serve warm with your choice of sides.
