Main Course
Prepare the Chicken
Preheat your oven to 200°C (400°F). In a small bowl, mix olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper.
Marinate the Chicken
Place the chicken breasts in a baking dish and pour the marinade over them. Ensure both sides are coated. Let it marinate for at least 30 minutes.
Bake the Chicken
Bake the marinated chicken in the preheated oven for 25-30 minutes or until fully cooked (internal temperature of 75°C/165°F).
Side Dish
Prepare the Vegetables
While the chicken is baking, wash the asparagus and cherry tomatoes. Trim the ends of the asparagus.
Roast the Vegetables
On a baking sheet, toss the asparagus and cherry tomatoes with olive oil, balsamic vinegar, salt, and black pepper. Roast in the oven for 15-20 minutes alongside the chicken.
Finish the Roasted Vegetables
Once roasted, remove from oven and sprinkle with grated Parmesan cheese before serving.
Dessert
Make the Chocolate Ganache
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.
Flavor the Ganache
Stir in vanilla extract and a pinch of sea salt. Allow the mixture to cool slightly.
Serve the Ganache
Pour the ganache into small serving cups and refrigerate for at least 30 minutes until set. Serve chilled.
