Method
Making the Tart Crust
Prepare the dough
In a mixing bowl, combine flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Stir in ice water gradually until the dough comes together.
Chill the dough
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out the dough
Preheat the oven to 375°F (190°C). On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim excess.
Blind bake the crust
Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment and bake for an additional 10 minutes until golden.
Preparing the Blueberry Filling
Mix the filling ingredients
In a medium saucepan, combine fresh blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until the mixture starts to bubble and thicken, stirring gently.
Fill the tart
Pour the blueberry mixture into the baked tart crust and spread evenly. Allow to cool to room temperature.

Slice the tart and serve with scoops of vanilla ice cream on the side. Garnish with additional fresh berries.
