Preparation

Clean the Crawfish

Rinse the crawfish thoroughly under cold running water to remove any dirt or debris. Soak them in a large bowl of salted water for about 30 minutes, then rinse again.

Prepare Vegetables

Shuck the corn and cut it in half. Wash the potatoes and cut them into quarters. Smash the garlic cloves with the flat side of a knife. Cut the lemon in half.

Prepare Sausage (Optional)

If using andouille sausage, slice it into bite-sized pieces.

Boil Water

In a large pot, fill with water (about 4-5 quarts) and bring it to a boil over high heat. Add the salt, Old Bay seasoning, black pepper, and cayenne pepper.

Add Vegetables

Once the water is boiling, carefully add the potatoes and corn. Boil for about 10-12 minutes until the potatoes are tender.

Add Sausage (Optional)

If using, add the sliced andouille sausage to the pot and cook for another 5 minutes.

Cook the Crawfish

Add the cleaned crawfish and garlic to the pot. Boil for an additional 3-5 minutes until the crawfish turn bright red and are fully cooked.

Finish and Serve

Remove the pot from heat. Squeeze the lemon halves into the pot and stir everything together. Let it sit for 5 minutes before draining. Serve hot, garnished with chopped parsley if desired.
