Method
Grapefruit & Lime Syrup
Combine grapefruit juice, lime juice, sugar, and water in a small saucepan. If using, add grapefruit zest for extra aroma.
Warm the mixture over medium-low heat, stirring frequently until the sugar fully dissolves (do not boil). This should take about 3–5 minutes.
Once sugar is dissolved and the mixture is slightly thickened, remove from heat and let cool to room temperature, about 20–30 minutes. If you used zest, strain the syrup through a fine mesh sieve to remove solids.
Transfer the syrup to a clean jar or bottle and refrigerate. Syrup will keep chilled for up to 10 days.
Cocktail Assembly
Prepare Glass
Fill a highball or Collins glass with ice (about 1 cup).
Pour 1.5 oz (3 tbs) of the prepared grapefruit & lime syrup over the ice.
Add 0.5 oz fresh lime juice.
Top with 4 oz cold club soda. Gently stir once or twice to combine without losing too much carbonation.
Garnish with a lime wheel or wedge and an optional grapefruit twist. Serve immediately.
