Method

Preparation of Mushrooms

1

Clean the Mushrooms

Wipe the portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and gills if desired.

2

Marinate

In a bowl, mix olive oil, salt, and black pepper. Brush this mixture onto both sides of the mushrooms.

3

Grill the Mushrooms

Preheat the grill to medium-high heat. Place the marinated mushrooms on the grill and cook for about 5-7 minutes on each side, or until tender and grill marks appear.

Preparation of Toppings

4

Prepare the Toppings

While the mushrooms are grilling, chop the tomatoes, onion, cilantro, and serrano peppers, and place them in a bowl. Mix well to combine.

Assembly

5

Assemble the Dish

Once the mushrooms are grilled, place them on a serving platter. Top each mushroom with the tomato mixture, then sprinkle the shredded Jack cheese over the top.

6

Melt the Cheese

You can either place the assembled mushrooms under a broiler for 1-2 minutes until the cheese melts or cover the platter with aluminum foil for a couple of minutes.

Serving

7

Serve

Serve the grilled mushroom lupe warm as an appetizer or a side dish.
