Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
Coat the Calamari
Dip the calamari rings into the buttermilk, allowing any excess to drip off. Then, dredge them in the flour mixture until fully coated.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).
Fry the Calamari
Working in batches, carefully add the coated calamari to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
For the Marinara Sauce
Add the Tomatoes
Pour in the canned crushed tomatoes, and stir in the dried oregano, salt, black pepper, fresh basil, and sugar. Bring to a simmer.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened.
