Prep the Vegetables

Wash the fresh spinach thoroughly under cold water to remove any dirt or grit. Drain and set aside. Clean the mushrooms with a damp cloth and slice them into thin pieces. Peel and slice the red onion into thin rings.

Make the Garlic Herb Oil Sauce

In a small saucepan over medium heat, combine the olive oil and minced garlic. Sauté until the garlic is fragrant and golden, about 2-3 minutes. Be careful not to burn the garlic. Remove from heat and stir in the dried oregano, dried basil, salt, and black pepper. Allow the sauce to cool slightly.

Sauté the Vegetables

In a large skillet, heat a tablespoon of the garlic herb oil sauce over medium heat. Add the sliced red onion and sauté for 2-3 minutes until they start to soften. Then, add the sliced mushrooms and cook for an additional 4-5 minutes until they are tender.

Combine and Serve

Add the fresh spinach to the skillet with the sautéed red onion and mushrooms. Pour in the remaining garlic herb oil sauce and toss everything together until the spinach is wilted, about 2-3 minutes. Remove from heat and serve warm.
