Wash and scrub the Russet potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife to about 1/8 inch thick.

Soak the Potatoes

Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and ensures crispiness.

Heat the Oil

In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.

Fry the Chips

Remove the potatoes from the water and pat them dry with paper towels. Carefully add a small batch of potatoes to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crisp, about 3-4 minutes.
