Prepare
Chill the serving glass (coupe or rocks) by filling it with ice and cold water while you mix the cocktail, or place it in the freezer for a few minutes.
Juice & juice prep
If using fresh cucumber, peel (if desired) and press or blend a peeled cucumber and strain through a fine mesh to yield about 0.5 oz of cucumber juice. Measure 0.75 oz fresh lime juice.
Dry shake (if using egg white)
In a cocktail shaker, add gin 2 oz, Green Chartreuse 0.5 oz, fresh lime juice 0.75 oz, simple syrup 0.5 oz, cucumber juice 0.5 oz, and the egg white (if using). Seal the shaker and shake vigorously without ice for 15 seconds to emulsify and create foam.
Wet shake
Add a generous handful of ice to the shaker (enough to chill well). Shake vigorously for 12–20 seconds until the shaker is very cold to the touch and the mixture is well chilled.
Double strain
Discard the ice/water from the chilled serving glass. Strain the cocktail through a Hawthorne strainer and then through a fine mesh strainer into the chilled glass to remove ice shards and any cucumber pulp for a silky texture.
Finish & garnish
Garnish with a thin cucumber ribbon across the top or a lime wheel on the rim. Serve immediately.

If you prefer a stronger herbal note, increase Green Chartreuse to 0.75 oz and reduce gin to 1.75 oz; adjust to taste.
