Method
Prepare
Chill glass
Place serving glasses in the freezer or fill with ice water to chill while you prepare the mocktail (5–10 minutes).
If using fresh pineapple or orange, press/juice until you have the required amounts. Measure juices and other ingredients.
Mixing
Combine base ingredients
In a cocktail shaker or large jar, add the fresh orange juice (1.5 cups), pineapple juice (1 cup), fresh lime juice (1 tablespoon), cream of coconut (3 tablespoons), coconut water (1/2 cup), and simple syrup (1 teaspoon).
Shake
Add a handful of ice (about 1 cup) to the shaker, secure the lid, and shake vigorously for 10–12 seconds until well chilled and slightly frothy from the coconut.
Add bitters (optional)
If using, add 2 dashes of Angostura bitters to the shaker and give a gentle roll (no heavy shaking) to incorporate the bitters' aroma and complexity.
Finish & Serve
Discard the ice or water from the chilled serving glass and add fresh ice if desired.
Strain and top with fizz
Double-strain the shaken mixture into the prepared glass over fresh ice. Top with approximately 3 oz (about 90 ml) club soda or sparkling water to add brightness and effervescence. Stir gently once to combine without losing carbonation.
Garnish
Garnish with a pineapple wedge or orange wheel on the rim. Sprinkle a small pinch (about 1 teaspoon) of toasted coconut flakes over the foam or on the garnish for aroma and texture, if desired.
Serve immediately with a straw. Optionally provide a small stirrer so guests can adjust carbonation/sweetness as desired.
