Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, salt, granulated sugar, and instant yeast.
Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until it is smooth and elastic. Shape the dough into a ball.
First Rise
Place the dough in a greased bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Butter Layering
Prepare Butter
While the dough is rising, take the cold unsalted butter and place it between two sheets of parchment paper. Using a rolling pin, pound the butter into a rectangle that is about 1/2 inch thick. Chill in the fridge until ready to use.
Laminate the Dough
Roll Out the Dough
Once the dough has risen, turn it out onto a lightly floured surface. Roll it into a rectangle that is about 18x12 inches.
First Fold
Roll the dough out gently to a rectangle about 24x12 inches. Fold it into thirds like a letter. Wrap in plastic wrap and refrigerate for 30 minutes.
Second Fold
After chilling, roll the dough out again to 24x12 inches and fold into thirds. Wrap and chill for another 30 minutes.
Final Fold
Repeat the rolling and folding process one last time. Chill for 30 minutes before shaping.
Shaping and Baking
Shape Croissants
Roll the dough out to a large rectangle, about 24x12 inches. Cut the dough into triangles (about 5 inches wide at the base). Starting from the base, roll each triangle tightly towards the tip.
Final Rise
Place the rolled croissants on a baking sheet lined with parchment paper. Cover with a kitchen towel and let rise for about 1 hour, or until doubled in size.
Preheat Oven
Preheat your oven to 400°F (200°C).
Bake Croissants
Brush the tops of the croissants with a little milk or egg wash (optional) and bake for 15-20 minutes until golden brown.
Cool and Serve
Remove from the oven, let cool slightly on a wire rack, and serve warm.
