Method
Prepare the Fries
Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into fries, approximately 1/4 inch thick.
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes for crispier fries.
Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel.
Fry the Potatoes
Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Potatoes
Carefully add the dried fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry them for about 4-5 minutes or until golden brown.
Drain the Fries
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.
Make the Tajin Mayo
Mix Ingredients
In a small bowl, combine the mayonnaise and Tajin seasoning. Stir until well combined.
Assemble and Serve
Top the Fries
Place the hot fries on a serving platter. Drizzle the Tajin mayo generously over the fries.
Add Toppings
Sprinkle the crumbled Cotija cheese and chopped cilantro over the top of the fries.
Serve Immediately
Serve the fries hot, with extra Tajin mayo on the side for dipping.
