Method
Main Preparation
Prepare the Pork Saddle
Preheat your oven to 180°C (350°F). In a large bowl, mix together olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Rub this mixture all over the pork saddle.
Sear the Pork
In a large oven-safe skillet, heat a bit of olive oil over medium-high heat. Once hot, add the pork saddle and sear for about 5-7 minutes on each side until golden brown.
Deglaze and Roast
Pour the white wine into the skillet to deglaze, scraping up any browned bits from the bottom. Then, add the vegetable broth. Transfer the skillet to the oven and roast for about 1 hour, or until the internal temperature reaches 70°C (160°F).
Vegetable Preparation
Roast the Vegetables
In a separate baking tray, toss the chopped potatoes, carrots, zucchini, olive oil, salt, and pepper. Roast in the oven for about 30-40 minutes until tender and slightly crispy.
Serving
Plate the Dish
Once the pork is done, let it rest for 10 minutes before slicing. Serve the sliced pork with the roasted vegetables alongside.
