Preparation of Vegetables

Prepare the Vegetables

Wash all the vegetables thoroughly under running water. Slice the cucumbers into spears or rounds, julienne the carrots, and cut the bell peppers into strips. Make sure the cauliflower florets are bite-sized and trim the ends of the green beans.

Pack the Vegetables

In sterilized jars, pack the prepared vegetables tightly, leaving about an inch of space at the top.

Making the Pickling Brine

Combine Ingredients

In a large saucepan, combine the water, white vinegar, salt, sugar, mustard seeds, black peppercorns, dill seeds, garlic cloves, and bay leaves.

Bring to a Boil

Heat the mixture over medium-high heat until it comes to a boil, stirring occasionally to dissolve the salt and sugar.

Simmer the Brine

Once boiling, reduce the heat to low and let it simmer for about 5 minutes to allow the flavors to meld.

Pickling Process

Pour the Brine

Carefully pour the hot pickling brine over the packed vegetables in the jars, ensuring they are completely submerged. Leave some space at the top of the jars.

Seal the Jars

Wipe the rims of the jars with a clean cloth to remove any residue, then seal them tightly with sterilized lids.

Cool and Store

Allow the jars to cool to room temperature, then store them in the refrigerator. The pickles will be ready to eat in about 24 hours but taste best after a week.
