Directions

1

Sauté the Aromatics

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

2

Add the Spices

Sprinkle the curry powder over the sautéed onions and garlic. Stir well to combine, allowing the spices to toast for about 1 minute, enhancing their flavors.

3

Incorporate Tomato Paste

Add the tomato paste to the skillet, stirring well to mix it with the spices and aromatics. Cook for an additional 2 minutes, allowing the mixture to deepen in flavor.

4

Pour in Coconut Milk

Slowly pour the coconut milk into the skillet, stirring continuously to combine. Bring the mixture to a gentle simmer.

5

Add the Shrimp

Once the sauce is simmering, add the shrimp to the skillet. Stir to ensure the shrimp are well-coated with the curry sauce.

6

Cook the Shrimp

Allow the shrimp to cook in the curry sauce for about 5-7 minutes, or until they turn pink and opaque. Season with salt and black pepper to taste.

7

Garnish and Serve

Once cooked, remove from heat and garnish with fresh chopped cilantro. Serve the shrimp curry hot with rice or naan.
