Preparation
Make the Pineapple Simple Syrup
In a saucepan, combine fresh pineapple, granulated sugar, and water. Bring to a boil over medium heat, stirring until the sugar is dissolved. Reduce heat and simmer for 10 minutes. Remove from heat and let cool. Strain the syrup through a fine mesh sieve into a jar, discarding the solids.
Mix the Drink
In a large pitcher, combine the pineapple simple syrup and fresh lemon juice. Stir well to combine. Slowly add sparkling water, mixing gently to retain the bubbles.
Serve
Pour the pineapple lemon craft soda into glasses filled with ice. Garnish with lemon slices and fresh mint leaves as desired.
