Salmon

Method

Salmon

1

Dice the salmon

Using a sharp knife, cut the salmon into small 1/8-inch dice. Keep the fish cold on ice or in the fridge.

2

Chill

Place the diced salmon on a chilled plate or tray to maintain texture while preparing the dressing.

Aromatics & Seasonings

3

Prepare aromatics

Finely mince red shallot; chop capers; and finely chop fresh dill and chives.

4

Make citrus dressing

Whisk lemon juice, lemon zest, Dijon mustard, and olive oil together until emulsified. Season with sea salt and white pepper.

5

Combine

Gently fold the aromatics into the salmon, then drizzle or fold in the citrus dressing until the mixture is evenly coated but still chunky.

To Serve

6

Plate

Pack the tartare into a ring mold or onto each toast point, forming a neat mound.

7

Garnish

Garnish with extra dill or capers if desired and serve immediately.
