Prepare the glass

Choose a rocks glass or coupe and chill it in the freezer for 5–10 minutes, or fill it with ice while you prepare the cocktail to cool it quickly.

Salt the rim

Pour a small amount of sea salt or smoked sea salt onto a plate. Run a lime wedge around the rim of the chilled glass, then gently dip or roll the rim in the salt until evenly coated. Tap off excess.

Measure and add spirits

In a cocktail shaker, add 2 oz blanco tequila and 0.5 oz reposado tequila. Using a small jigger helps keep the balance between bright and rounded tequila flavors that complement seafood.

Add liqueur, citrus, and sweetener

Add 0.75 oz orange liqueur, 1 oz freshly squeezed lime juice, 0.25 oz freshly squeezed lemon juice, and 0.5 oz agave syrup into the shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup) to the top. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold and slightly frosted. This both chills and dilutes the cocktail to the correct balance.

Strain and finish

Discard ice from the chilled glass if you used it to cool. Double-strain the cocktail into the prepared glass over fresh ice (or serve neat in a coupe). If using, gently pour 0.25 oz orange liqueur over the back of a spoon to float on top for extra aroma.

Garnish

Express an orange twist over the drink by pinching it skin-side down to release oils, then run the twist around the rim and drop it into the drink. Add a lime wheel to the rim or float it in the glass. Optionally sprinkle a tiny pinch of smoked salt or grapefruit zest on top for an aromatic finish that pairs with lobster and other seafood.

Serve immediately. The Lobster House Rita is best enjoyed fresh and cold alongside seafood — its bright citrus, top-shelf tequilas, and subtle orange notes complement shellfish and grilled fish.
