Cook the Rice

In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.

Chop Vegetables

While the rice is cooking, wash and chop the bell peppers, carrots, broccoli, and spinach into bite-sized pieces.

Prepare Protein

If using chicken, season the chicken breasts with salt and black pepper. If using tofu, drain and press it to remove excess moisture, then cut it into cubes.

Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped vegetables and stir-fry for about 5-7 minutes until they are tender but still crisp.

Cook Protein

In the same skillet, add the seasoned chicken breast or tofu cubes. Cook for about 7-10 minutes until the chicken is cooked through or the tofu is golden brown.

Combine Everything

Once the rice is cooked, add it to the skillet with the sautéed vegetables and protein. Pour in the soy sauce, and toss everything together until well mixed. Cook for an additional 2-3 minutes to heat through.
