Ground Beef Patties
Form patties
Divide the 1 lb ground beef into two equal portions (about 8 oz each). Lightly shape each portion into a loose ball; do not overwork the meat. Flatten each ball into a patty about 4 inches (10 cm) across and roughly 3/4 inch thick, leaving the center slightly thinner so the patty cooks evenly.
Season
Season both sides of each patty with kosher salt (about 1/2 tsp per side) and freshly ground black pepper (about 3/4 tsp per patty). Lightly brush each patty with the Worcestershire sauce and rub it in gently.
Cook patties
Heat a large cast-iron skillet or heavy griddle over medium-high heat until very hot, about 3–4 minutes. Add 1 tablespoon neutral oil and swirl to coat. Place patties in the skillet (do not overcrowd). Cook for 3 minutes without moving to develop a crust. Flip once and cook for another 2 minutes for medium; during the last 30–45 seconds of cooking, place one slice of American cheese on each patty and cover the skillet with a lid or large bowl to melt the cheese. Remove patties and rest 2 minutes.

In a small bowl, whisk together mayonnaise (3 tbs), ketchup (1 tbs), yellow mustard (1 tsp), sweet pickle relish (1 tsp), apple cider vinegar (1 tsp), granulated sugar (1 tsp), and 1/4 tsp freshly ground black pepper until smooth. Taste and adjust salt or sugar to preference. This yields enough sauce for two burgers.
Classic Toppings
Prepare toppings while cooking: thinly slice the yellow onion and tomato. Shred about 1 cup iceberg lettuce. Have 3 pickle slices per burger ready.
Assembly
Spread a tablespoon of the sauce on the bottom half of each toasted bun. Place a cheese-topped beef patty on the sauced bottom bun. Top each patty with 3 pickle slices, a few rings of sliced onion, a slice of tomato, and a small handful of shredded lettuce. Spread remaining sauce on the top bun and close the sandwich.
Serve immediately while hot. Optionally serve with fries or chips.
