Cook the Capellini
In a large pot, bring salted water to a boil. Add the capellini pasta and cook for about 2-3 minutes, or until al dente. Drain and set aside, reserving 1 cup of the pasta water.
Prepare the Sauce
In a large skillet over medium heat, melt the unsalted butter and olive oil together. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Add Tomatoes
Add the canned whole tomatoes to the skillet, breaking them up with a wooden spoon. Season with salt and black pepper. Allow the sauce to come to a simmer and cook for about 15-20 minutes, stirring occasionally until it thickens slightly.
Incorporate Basil
Stir in the chopped fresh basil leaves into the sauce, and simmer for an additional 5 minutes to allow the flavors to meld.
Combine Pasta and Sauce
Add the cooked capellini to the skillet. Toss gently to combine, adding reserved pasta water a little at a time to reach desired sauce consistency.
Serve
Remove from heat and serve immediately, topped with freshly grated Parmigiano-Reggiano cheese.
